as the crust cools, i slice up several key limes. these little gems are more intense in flavor and smaller than the standard (also known as persian) lime that can be found in any produce department. any lime can be used to make a yummy pie, but, the key lime gives it that extra limey-ness that makes a truly memorable dessert.
