the official "for fussy eyes only preview" of olive, molly and sophie's traditional st. patricks day treat. it sound like the perfect thing to survive on if you can't abide corned beed and cabbage. i have not tested this recipe, but, since there are no known poisonous substances in it and it contains tasty apples, sugar and yummy butter, i am sure it's grand. of course, you can die the cream, ice cream or custard to garnish the cake a nice color of emerald green for the holiday. this will not only make it more festive, but, might discourage others from eating all of your lovely cake... more for you!

so without further ceremony, here it is, for my fussy pals only:


Kerry Apple Cake

8 ounces/225g plain flour
4 ounces/ 100g butter
four ounces/225g fine sugar
one level teaspoon of baking powder
a pinch of salt
3 medium cooking apples, peeled, cored and sliced
1 teaspoon grated lemon rind
1 large egg and a little milk
2 tablespoons of brown sugar
a pinch of nutmeg and cinnamon

heat oven to 180/350 or gas 4

1. rub fat into flour, add sugar and mix in apples.
2. beat egg and milk together and combine with above to make a sticky-ish
dough.
3. Add lemon rind and mix.
4. Transfer into a seven inch sandwich tin*
5. Mix brown sugar, nutmeg and cinnamon togther and sprinke over top of
mixture.
Cook for around 40 minutes - should be crispy brown on top and hollow
sounding when you tap the bottom of the tin. Serve with cream, ice cream or
custard.

* round cake tin.
